I know what you’re thinking, “pickles and chicken?”, but this is one of those recipes you shouldn’t knock till you try it. I made the chicken two ways for our Super Bowl Sunday snacks, both original and spicy for the husband. Unfortunately, the spicy was gone before I could get a proper picture, so I will try to make it again soon so you can choose which version you might like to try for yourself.
The pickle part of the recipe puts to use all that great flavor that normally gets dumped down the drain when you finish a jar, or if you live in my house, your eight year old drinks it! Since all of the salt, sugar, and spices of a traditional brine is already in the pickle juice, it saves you the trouble of having to make the brine yourself and the vinegar adds tangy zip!
